Pancake Flight
Four stacks of silver dollar pancakes, each prepared differently with a common theme.

This week’s theme:
Coffee & Chocolate

1.   Coffee Berry & Chocolate ¬– Buttermilk pancakes topped with almond honey; fresh raspberries drizzled with chocolate ganache and stuffed in between with coffee ricotta cheese.

2.   Chocolate, Pecan & Kahlua – Chocolate infused buttermilk pancakes with pecan paste stuffed in between and then topped with Kahlua cream reduction, whipped cream and cinnamon.

3.   Chocolate Chip Coffee Cake– Cinnamon spiced buttermilk pancakes with chocolate chips; topped with coffee whipped cream and a light drizzle of caramel sauce.

4.   Orange Coffee White Chocolate – Buttermilk pancakes with orange-coffee mascarpone cheese topped with traditional Mexican chocolate whipped cream and chocolate syrup.

Huevos a la Mexicana    10.95

Three eggs scrambled with diced fresh tomato, Spanish onion, jalapeno, cilantro and a hint of garlic. Served with a dollop of fresh homemade guacamole and on the side with a organic mixed greens tomatillo-honey salad with thyme vinaigrette dressing and fried corn tortilla strips.

2.   Hot Fudge Sundae – Buttermilk pancakes topped with crumbled brownies, chocolate whipped cream and chocolate sauce.

3.   Malt – Vanilla custard on buttermilk pancakes topped with malt whipped cream and a wafer.

4.   Root Beer Float – Buttermilk pancakes topped with root beer syrup and vanilla bean mousse.

2.   Puerto Rico – Caramelized pineapple inside buttermilk pancakes topped with coconut rice pudding and cinnamon sugar.

3.   Haiti – Buttermilk pancakes topped with mango whipped cream, toasted peanuts and slices of fried plantains.

4.   Trinidad & Tobago – Guava cream cheese in between buttermilk pancakes topped with coconut whipped cream and coconut shavings.

1. "Don't stop till you get enough" ¬-- Blueberry buttermilk pancakes topped with almond anglaise, strawberry whipped cream and fresh strawberry slices.

2. "Jam" – Buttermilk pancakes with strawberry Jam in between cakes ginger-pear Jam topped with whipped cream and ground nuts.

3. "Monkey business" – Buttermilk pancakes with bananas inside topped with banana whipped cream and a light drizzle of honey.

4. "Black and White" -- Chocolate buttermilk pancakes topped with chocolate syrup and white chocolate chips.

Citrus & Herbs!

1. Lavender-Orange: Buttermilk pancakes topped with Orange curd and Orange zest, and stuffed in between with vanilla-lavender ricotta cheese.

2. Rosemary-Blood Orange: Rosemary vanilla cream on top of buttermilk pancakes with blood Orange strawberry sauce.

3. Tarragon-Lime: Buttermilk pancakes topped with lime whipped cream, sweet lime zest and brown sugar- tarragon syrup.

4. Basil-Grapefruit: Cottage cheese stuffed in between buttermilk pancakes and topped with grapefruit-basil salad and sugar crystals.

2.   Mango: Mango-yogurt whipped cream on buttermilk pancakes topped with ground nuts.

3.   Papaya: Diced fresh papaya on top of buttermilk pancakes with lime-honey and chifonade mint.

4.   Pina Colada: Coconut infused buttermilk pancakes topped with caramelized diced pineapples and toasted coconut.
